Wild Pure Tasmanian Pot Still Rum is a collection of single cask rum expressions fermented, distilled, and matured at our Somerset distillery just metres from the Bass Strait.
Our rum new make spirit is produced from organic panella sugar and brewed with pure Tasmania water before being double distilled in our alembic 100% copper pot still. Producing a light, floral, and ester rich spirit that has notes reminiscent of rhum agricol while still exhibiting a distinctly Tasmanian character strongly influenced by the ocean at our doorstep.
Our first release of Tasmanian pot still rum was traditionally aged for just over 2.5 years in a 37L American oak cask that previously held peach applejack and has infused our delicate rum with a rich bouquet of peaches, apples, and mixed fruit that dominates the mid palate before gently fading into mellow burnt sugar accompanied by hints of spice and delicate grassy notes.
This release of Will Pure Tasmanian pot still rum has a light floral and delicate character that best endears itself to being consumed neat or with some candied pear as a gourmet highball.
