Wild Pure Tasmanian Pot Still Rum is a collection of single cask rum expressions fermented, distilled, and matured at our Somerset distillery just metres from the Bass Strait.
Our rum new make spirit is produced from organic panella sugar and brewed with pure Tasmania water before being double distilled in our alembic 100% copper pot still. Producing a light, floral, and ester rich spirit that has notes reminiscent of rhum agricol while still exhibiting a distinctly Tasmanian character strongly influenced by the ocean at our doorstep.
This release of Tasmanian pot still rum was traditionally aged for just over 2.5 years in a 37L American oak cask that previously held wheated bourbon. Resulting in a delicate rum with a rich combination of vanilla, spice, molasses, and grassy notes before gently fading into mellow burnt sugar finish.
This release of Will Pure Tasmanian pot still rum has a light and delicate character that best endears itself to being consumed neat or in a cocktail that makes you think of some place warm like a Mai Tai.
